We had a chance to write a guest post for Heal Blossom Grow in January. If you’re new to the plant based diet, be sure to check out this post regardless of the time of that year that you see it.
Typically I would eat Cashewgurt with blueberries and some other fruits, but my dad got me hip to eating Hemp Hearts with it so here goes the quickest recipe on this site to date!
I left out the burrito for this recipe so that I could eat more ingredients and less gluten. Definitely a good decision.
I also went with riced cauliflower, which is the first time I believe I’ve used this ingredient. You can probably use regular rice and it’ll turn out just fine.
This recipe gets a C- in my opinion. I found out I like Red Lentil rotini better than Chickpea rotini. I also am not Simple Truth’s biggest fan. If the Rotini was replaced with the Red Lentil variety and the protein was replaced with absolutely anything else (like more mushrooms), I would give this recipe a B.
I figured to make this interesting by trying out the Trader Joe’s Mango sauce I’ve had sitting in my fridge for over a month.
This recipe was made using ingredients from my local King Soopers. I went shopping earlier today and got a pretty good haul of stuff.
Everything you see on the right fit in my bookbag and was easy enough to bike back home. Go reduced Co2 emissons!
It’s not gluten free. It’s not raw. But it is an improvised vegan dish made during a bout of hungriness. So I’ll take it.
